Ramen Noodles

Ingredients
1 tbsp sesame oil
2 tsp garlic, finely diced
1 tsp ginger, julienne
1 shallot, finely sliced
1 tbsp toasted white sesame seeds
150 g pork mince
1 tsp chili bean paste
2 tbsp miso
1 tbsp sugar
1 tbsp mirin
4 cups chicken stock
2 servings ramen noodles
Raco pot
to serve
bean sprouts
soft boiled eggs
corn kernels
nori
spring onion
chili oil
pickled red ginger
wombok steamed
lime
Method
In a heavy based pot on medium to high heat add oil and saute shallots, garlic and ginger. Let this cook for 4 minutes. Add pork and cook until browned, around 6 minutes.
Add the rest of the ingredients except for the noodles and simmer for 5-10 minutes and serve in bowl over the noodles and top with garnishes.
